Single-sided griddles are used in many commercial kitchens to cook a wide variety of foods on top of the griddle's hot flat surface.  There exist also double-sided griddles, which have an upper plate (top platen) that cooks food from the top at the same time.  The RTF has measures for the purchase of new efficient gas and electric thermostatically-controlled single-sided griddles with gas griddles having far more regional potential.  Efficiency improvements can come from the manufacturer making improvements in insulation, burner efficiency, and thermostatic controls.
