Convection Ovens have a wide variety of uses from baking and roasting to warming and reheating. Unlike conventional ovens which use radiant heat, convection ovens use fans to circulate hot air within the cabinet. Savings occur from (1) reduced idle energy consumption from improved insulation and gaskets and (2) the use of infrared burners.

RTF staff will work to update the measure per the recommendation memo and seek RTF approval for "Active" status by the sunset date.
